steam fish

just had a quick idea on steaming fish but have yet to try it. hopefully it works out... thought ill just put it down incase I forget

Ingredients

1 Sour plum

1 Tomato

2 inch Ginger

1 Fish

2 tbsp of Hsiao xing wing

2 tbsp oil

Sauce

1/4 tbsp sesame oil

2 tbsp light soy

1 tbsp hsiao sing wine

1/2 tbsp dark soy

Step

1) Cut sour plum. tomato, ginger and lay them on the fish

2) pour hsiao xing wine on fish

3) Steam for 8-10 min

4) remove from steamer

5) heat oil in pan, after which pour on fish

6) pour sauce into pan and heat it up

7) pour over fish to complete

how to fry chicken wings

Ingredients

1Kg Wings cut into winglets

75g of Cornflour

75g of Flour

1 Egg

Salt & Pepper

Oil

Steps

1) Marinate wings with salt and pepper and set aside...

2) mix Cornflour and flour evenly

3) beat the egg

4) Dip wings in egg and flour mixture..

5) Fry wings on medium-high heat till slightly golden. (Purpose of this is to cook the chicken and create flour layer)

6) Remove and set aside

7) Fry the wings again now on high heat till golden brown (This is to finally make the skin crisp)

Now comes the fun part. You can eat it as it is or add sauces. One of my favourite would be adding lemon or sweet and sour sauce...

pork and peach

Ingredients

4-6 Pork Loin

1 Can of Peach

Ground Ginger

Salt & Black Pepper

Cinnamon

1/2 Cup white wine

1 tbsp Hot sauce

2 tbsp Worcester sauce

Cooking

1) Marinate pork loins with ginger, salt,pepper and cinnamon. Set aside for 30 min

2) Semi cook pork in skillet, making sure it's brown on both sides.

3) Remove pork.

4) de glaze the pan with the white wine

5) Mix Worcester and Hot sauce with peaches and add into the pan

6) Reduce the sauce and finally add the pork into the pan..

7) Cook for a few min and done!

braised pork belly

one of my favourite

Ingredients

1kg pork belly

3-4 Hard boiled Eggs

3-4 Garlic

4 tau pok

4 tbsp Soy sauce

2 tbsp Dark soy

2 tbsp light soy

3 tbsp sweet soy

2 tbsp hsiao sing wine

1/2 tsp sugar

1 Star anise

4-5 clover

Method

1. Boil 1 litre of water

2. When boiling, add the pork belly (chopped up) and garlic (whole)

3. Add all the sauces, star anise and clover.

4. Cook at medium for 30-40 mins

5. add tau pok and egg.

6. simmer for hours for best result

bacon & mushroom aglio olio spag.

one of the best recipe I created in Aus...

Ingredients

200-300g Thin Spag (clams or penne as alternative)

5 Bacon rashers

400g mushrooms

3-4 bunch of coriander

1 Large Onion

2 cloves of garlic

3-4 small chili 

1 cup white wine

3-4 tbsp Olive Oil

Cooking

1. cut up the bacon and put it into the oven at 200 deg until crispy.

2. chop garlic up. slice onion. cut mushrooms. chop chili.

3. wack some oil into the pan.

4. cook onion till soft.

5. add mushrooms and cook till aroma emerges

6. add garlic and chili to cook for 1-2 mins

7. add white wine and cook till reduced.

8. add the crispy bacon and coriander.

9. add cooked pasta (remember to semi cook the pasta, if you fully cook the pasta cooking it this time will cause it to be really soft. losing the bouncy texture)

10. toss and you're done!

Chicken Wings

thought i'll just dump all the recipes i have to my blog for sharing as well as a place for me to refer incase i forget some of them. first up chicken wings.

Ingredients

1kg Chicken Wings

8 tbsp Kikoman Soyasauce

8 tbsp Honey

8 tbsp Ketchup

1 Large Onion

1/2 Lemon

Preparation

1.Preheat oven at 200 deg

2.Mix all the sauces together.

3.Wack the wings (cut up to drumlets) on a baking tray

4.Dump the onions(chopped to square 1cm each) on the wings.

5.Pour all the sauce over the wings

6.Bake for 30-40 mins at 200 deg.

Too easy. Great tasting wings for any party.

was Jesus rich?

Came across an article and a sermon discussing if Jesus was rich or not and both had a different perspective. The one proclaiming Jesus was rich advocated that being rich is a blessing from God and the more you give you will be blessed. And wearing branded clothes and expensive cars/house is also a blessing. Therefore it is good to have earthly riches since Jesus was rich as well! I find it appalling for the pastor to preach such messages! Another article advocates the opposite that Jesus was poor and he didn't even have a place to lay his head! So who is right? For you to decide.

rock concert

was once again reading up on articles regarding christian worship etc and I was watch a streaming of a particular church's service and i was really amazed. it was like a rock concert ! flashing lights, drummers whacking the drums like no tomorrow, guitarist strumming like Jim Hendriks and the audience jumping around going crazy. I actually tot it was some sort of a U2 concert. Even the songs being sung, you can't even tell if its christian songs or secular music.. Sooner or later people will start singing Lady Gaga for praise and worship.. Rara Ra.a.a.a. so this is how we need to be relevant in the 21st century.

being relevant ?

I was reading an article by Ps. Kong Hee regarding his wife's MTV and he wrote to defend her. In it I found several disturbing points. I quote 

"Are Christians living a sanitized life? Why have “Christian” productions been so ineffective in their reach to the unchurched, to the extent that even believers are not interested in their products?"

"As such, pop culture represents a powerful means of communicating to us what the real world is like, and how to live in it."

"The beautiful truth is that God is not against pop culture. "

And so he starts his Cultural Mandate of making Christianity relevant in the 21s century. I find it extremely hard to reconcile such an idea of making the bible relevant. Jesus clearly mention conformity in this verse: 

“I beseech you therefore, brethren, by the mercies of God, that ye present your bodies a living sacrifice, HOLY, acceptable unto God, which is your reasonable service. And BE NOT CONFORMED TO THIS WORLD: but be ye transformed by the renewing of your mind, that ye may prove what is that good, and acceptable, and perfect, will of God.”  - Romans 12:1-2. 

And "Jesus Christ is the same yesterday and today and forever." - Hebrews 13:8

Think about it.

Again my inquisitive mind lead me to read several articles regarding music in praise and worship. I quote from this article:

"I am convinced that if you took away the rock music, the church would lose its large crowds almost instantly. Rock music is a drug in itself. Timothy Leary, the ‘60s LSD guru, knew a lot about rock music and he testified: “Don’t listen to the words, it’s the music that has its own message. ... I’ve been stoned on the music many times.” He was right. Charismatic worshippers who think they are high on God might very well, in reality, be high on music. " 

and in a magazine a person wrote in to ask : “I just started attending church a few months back and really felt drawn to the presence of God, ESPECIALLY THROUGH THE TIMES OF PRAISE AND WORSHIP. Yet, each time when I try to meet God in the same way during my personal quiet time AND ‘FEEL’ THE TANGIBLE PRESENCE that I always sense during church services, I always fail. Is this because there’s something that I’m not doing right? Am I not worshipping in the correct way?” 

"The answer to the person’s question is that he or she is looking for the wrong thing and is confused about the nature of true worship of God. Worship has nothing to do with my feelings or with a “tangible presence.” Those things are easily counterfeited by the flesh and the devil. True worship is to give thanks to God and to serve Him obediently NO MATTER HOW I FEEL AND NO MATTER WHAT THE CIRCUMSTANCE. Abraham doubtless did not feel very good and had no tangible presence when he trudged toward the mountain with his most beloved son in tow with the purpose of sacrificing him in obedience to God’s command, but he was performing a most supreme act of worship. Job did not feel tingly, wonderful emotions when he was sitting in the ash heap scrapping his boils with pieces of clay pots and contemplating the loss of his children and wealth and rebutting his wife’s complaints, but he was worshipping God acceptably and fruitfully when he endured that terrible condition and did not curse God, but trusted Him in spite of how miserable he felt. In that horrible condition, Job said, “Though he slay me, yet will I trust in him: but I will maintain mine own ways before him.” That is true worship. It has nothing to do with being under the sway of powerful music or stirring up high emotions and pursuing a perception of God’s tangible presence. 

Hebrews 13:15-16 describes true worship: “By him therefore let us offer the sacrifice of praise to God continually, that is, the fruit of our lips giving thanks to his name. But to do good and to communicate forget not: for with such sacrifices God is well pleased.” Note the attributes of true worship: thanksgiving to God in all circumstances, doing good works or obedience to God’s commands, and communicating to those who have needs. One does not need rock music to accomplish any of these things. 

I challenge those committed to the contemporary philosophy to give up rock music for one month and serve the Lord without it. If you need rock music in order to enjoy and serve the Lord, you have a serious problem. If rock music is necessary or even important for the service and worship of Christ, what did God’s people do in A.D. 65 or 1240 or 1530 or 1850 or 1945? " - David Cloud

Are we aping popular culture so that non-Christians will be more comfortable and attracted to the church ?
